I’ve been getting my baking groove back on recently and am sharing two sweet recipes this week. Salted Chocolate Hazelnut Shortbread and Chocolate Coated Almond Brittle.
Making pudding usually requires an element of baking which, as a general rule is generally quite time consuming. There is steps and stages that cannot be skipped, as anyone who has tried (and failed) to ice a cake whilst it was still warm will know. And so, pudding is often the thing to go when planning for a dinner party. But the best parties finish with a sweet ending and whilst these two recipes are perhaps more sweet treats than a pudding per se, popped onto a nice plate with a good tub of ice cream or perhaps a bowl of fruit in tow and they can quite happily take on the role of pudding.
They also make for very good gifts if you are in fact going round to someones house for supper. And the best thing, is that neither take longer than 30 minutes to make.

SALTED CHOCOLATE ALMOND BRITTLE
These are particularly good with coffee. The brittle is wickedly sweet but the dark chocolate and salt gives it a grown up finish which I love. They make for very good gifts if you are going over to someone’s house too. Don’t be put off by the idea of making brittle. I promise you, this method is fool proof. I find silicone baking mats a game changer for this recipe. I have had mine for years and can’t find the exact brand but these ones look good! I use them for everything from cookies and cakes to meringues.
