SPRING THINGS AND TWO GOOD WAYS WITH RICOTTA
CHARRED SPRING ONION, SPRING PEA JALAPEÑO RICOTTA TART & RICOTTA WITH PEAS, BROAD BEANS, CONFIT GARLIC AND BASIL

Two very springy recipes for you this week. I always find my groove again this time of year and made this CHARRED SPRING ONION, SPRING PEA JALAPEÑO RICOTTA TART on a whim. It was so good I wanted to dedicate a post to it. I’ve said it before and I will say it again. Whoever invented ready rolled puff pastry deserves a medal, or at least one of those honorary blue plaques you see around London. This is an uncomplicated recipe but a very good one especially when friends come over. All it needs is a leafy salad on the side and a glass of something cold.
There’s also a recipe for RICOTTA WITH PEAS, BROAD BEANS, CONFIT GARLIC AND BASIL because ricotta is possibly one of my favourite things to eat and is so good enjoyed this way. Very nice as a starter (or enjoyed as a meal for two) with some good sourdough.

We’ve had some glorious weather in London recently which has felt needed. Spring has a wonderful way of appearing exactly when you need it. I had some bad luck last week. A big work blow, my poor husband broke his arm (which isn’t ideal with a five month old baby), and the basil plant died. Small things in the grand scheme of things but enough to rock you a bit.
But then the wisteria in the garden bloomed, the broad beans that my husband planted in his small vegetable trough shot up overnight, and on Thursday it was warm enough to leave the house with just a thin jacket. Outside my favourite green grocer there is now a rainbow of produce from vibrant green asparagus to rosy strawberries (which are early but are apparently growing with bounty in France. Just a few more weeks wait until we get the English crop too). I’m not sure if the London flight paths have changed but I can almost swear that the birds are chirping more, and last week I passed a family of ducklings running around like sweet mad things on the bank of the River Thames.
It’s true what they say about spring putting a literal spring in your step or at least it has in mine.
