IT ISN’T A PARTY WITHOUT A PUDDING & MY BROWN SUGAR CARAMEL MERINGUE CAKE

No dinner party is complete without a pudding and this pudding was made for a party. I LOVE an extra pudding and this one definitely feels extra when you bring it to the table. It is essentially two meringues sandwiched together with a LOT of cream. I love to fill it with whatever fruit is in season which at the moment is blackberries and the last of the figs. Don’t be put off by the idea of making the caramel. It is incredibly simple to make and looks far more impressive than it really is. I’ve added a how-to video at the bottom of the recipe to show you how simple it really is.

• 275g light brown soft sugar
