A pudding for you this week and the recipe for my FLOURLESS CHOCOLATE COFFEE MERINGUE CAKE. She is squidgy, she is chocolatey, she is grace. She is a very good pudding.
Some more exciting news this week in that I just launched a collection with PINK CITY PRINTS. It has been in the works for a while and been wonderful to see it come to life. Every time I query with my family or partner on what pudding to make the answer is always my flourless chocolate torte. I could suggest a tower of profiteroles drenched in boozy chocolate sauce and the answer will be ‘hmmm nice but I think chocolate torte’. I’ll throw in arm movements and lyrical description into a caramel almond pavlova with roasted apricots and whipped amaretto cream, even promising praline shards. But no, they just want the chocolate torte.
I love the chocolate torte, I really do. I love that its so simple and that it works every time. I’ve made it so many times now that there’s no need for measurements too which is also a bonus. But sometimes I just want to make something a little bit extra.
So the last time I had a request for my flourless chocolate torte I said ‘yes but Im going to make it a bit differently this time’. I’d been dreaming of doing some form of chocolate coffee meringue cake or tart for a while and thought the chocolate torte would make a very good base. So I added a layer of coffee meringue that baked on top of the torte until it was crisp on the surface but soft and cloud-like in the centre. There was a bit of playing around with the oven time. The beauty of the chocolate torte is its rich fudginess and the first two attempts were a little dry so a no-go. But the third trial was perfect. A squidgy almost molten centre chocolate torte with a layer of sweet coffee meringue.
Incidentally the recipe for the chocolate torte is also below. So if you too are looking for a chocolate torte, you’re also sorted. But if you fancy something a little bit extra then make the meringue. You won’t regret it.
