DIPPY THINGS FOR THE SUNSHINE
THREE VERY GOOD DIPS FOR SUMMER ENTERTAINING AND SEEDED CRACKERS

It is FINALLY sunny at home in London after what felt like the wettest April on record (in fact I googled it and it really was). I’ve been celebrating and eating outside as much as I can. When it comes to entertaining in summer, I lean into things that can be prepped ahead and don’t require too much lengthy cooking so that I get to spend as much time in the sunshine as possible. I am a BIG fan of a dippy situation and bits. Perhaps some squidgy focaccia, fat green olives, salami and wedges of pecorino. It may seem lazy but its delicious and if you put a bit of effort into making the dippy element a bit extra the whole thing shifts from make-shift picnic to domestic Queen.
This week I’m sharing THREE of my favourite dippy things; BUTTER ROAST TOMATOES ON COLD YOGURT, WHIPPED RICOTTA WITH WARM OLIVES, ANCHOVIES, PINE NUTS AND PARSLEY & GREEN HERBY BEAN DIP. Plus the recipe for my seeded crackers. I would call them dips but they are so much more… you’ll see.
