CRISPY SEA BREAM WITH DOUBLE LEMON CHICKPEAS AND GREEN SAUCE

I confess, I haven’t been entertaining much recently. I LOVE a dinner party. It’s why I started this newsletter in the first place and usually during this time of the year I have some sort of drinks/dinner thing every other weekend. But this year I am tired. I hate to be that new mother complaining about how tiring motherhood is but LOL I AM TIRED. So things have looked a little different this year.
(ps. I love my baby. She is the funniest, wildest little thing in the world but the tiredness, the love, the worry, and even the joy is exhausting)
What it really means is that I deserve an extra treat every day thank you very much (a scoop of coffee ice cream is my current go-to) and that dinners have become lunches. I still have people over but its usually around lunch time with a 8.00pm cut off which is still a pretty long run if you think that most people arrive around 12.30.
Recently I have been juggling more than usual with work too and so I’ve entertained even less (although I did cook for 20 for my mothers birthday last weekend where it felt very satisfying to flex my entertaining skills). Instead I’ve been cooking some nice things for my husband and I and this week I wanted to share a recipe with you for CRISPY SEA BREAM WITH DOUBLE LEMON CHICKPEAS AND GREEN SAUCE. If you’re looking for something delicious but relatively effortless to cook for a friend, lover, your mum then make this.
The chickpeas cook slowly with a double hit of lemon from the skin of preserved and fresh lemon. The result is a glossy, flavour rich soupy situation which acts as an almost self saucing element to some crispy pan fried fish (tips on how to get that really good crispy skin below). More sauce because I love green sauce and it is just the punchy zesty kick that everything needs. ps, if you have any extra try spooning it into the centre of an omelette…it is very very good.
