A quick, easy and very delicious supper this week that can be on the table in under an hour. CHICKEN, FETA, APRICOT KOFTAS WITH LEMON PISTACHIO RICE AND GREEN YOGURT DRESSING

I cooked for friends three times last week. This is often the way in September. Everyone back from their Mediterranean island adventures, kids back at school and that noticeable shift in the air that summer will soon be ending. I think of it as the last stretch of summer and make it my mission to eat outside as much as possible.
Barbecues are the obvious go-to for this. Pizza too if you have a pizza oven (arguably A LOT of fun) but sometimes I want something with all the summer feels without the faff of lugging a bag of charcoal from the shops or having to clean the BBQ.
This weeks recipe is just that and it’s one that comes together with pleasing symphony too. The rice cooks as you prep the koftas. The koftas rest whilst you blitz up a zingy yogurty dressing. The koftas go into the oven 15 mins before sit down and suppers on the table. You can pan fry the koftas (or even BBQ them) but I prefer grilling them in the oven. Less work, less mess and more time to enjoy a spritz in the sun.

this serves 4 but scales up very easily
NOTE | Look for a brown basmati rice with an advised cooking time of 20-25 mins
200g feta
500g of chicken mince (turkey mince works well too)
¼ of red onion, finely chopped
