Spiced carrots and carrot top pesto on whipped garlic yogurt + Roasted and quick pickled radishes on radish top yogurt

It’s Easter this weekend and I thought I’d share two very good sides that pair well for an Easter lunch. Spiced carrots and carrot top pesto on whipped garlic yogurt + Roasted and quick pickled radishes on radish top yogurt. I say sides, but they work very well as sharing starters too. Each one has a self saucing element which works deliciously with fish, chicken, lamb. Equally they can be enjoyed as the main event. I have a theory that the sides are usually the best bit and they definitely are in this case.

Some pesto notes: Making pesto at home is wonderfully easy but it can also be expensive. Using the tops from the radishes and carrots means you can save on herbs and cashews and hazelnuts usually fare cheaper to pine nuts. I also love the flavours that the different leaves and nuts bring to these pestos. Carrot tops are slightly bitter so benefit from a little extra lemon. Radish leaves are similar to rocket and love the creaminess of cashews but feel free to play around with the levels of acid and fat. Sunflower seeds also make for a delicious base in pesto.
