AROMATIC SEA BASS AND SWEET POTATO ONE-TRAY
with a speedy side of roasted broccoli and sesame chilli salsa

And welcome back to COME FOR SUPPER. Feedback from 2023 was that you all wanted more one-tray dinner party dishes and more fish recipes. A win for me as I love BOTH and this week I’m sharing one of my favourites. An aromatic traybake of sea bass and sweet potato with lemongrass, ginger and lime. The potatoes get a head start in the oven before the fish goes on top and everything ends up sizzling and crispy and delicious. I love to serve it with a simple roasted broccoli side jazzed up with a quick sesame chilli salsa.

The key here is to not overcrowd the trays otherwise you won’t get the really good caramelised bits of sweet potato so make sure you use two trays or even three if you’re cooking for 6-8.
