Hello and happy almost Christmas,
I had a baby last week so have been living life a lot slower and enjoying a lot more coffee for the last few days. Before the baby came I filled the freezer with mince pies. I make my own mincemeat which is just a combination of dried fruit, apple, butter, spices and a lot of brandy. There is no suet as is in the traditional recipe but I prefer it this way and it means everyone can enjoy it.
I kept a little mincemeat back for this tart and served it to friends who unbeknownst to me came over the day my daughter was born (she decided to arrive early). There was still some left in the fridge when we came back from hospital and we ate it at 2.00 in the morning listening to hymns on classic fm. I knew the tart would work (it is a variation of the almond tart recipe I have made time and time again. Last year I experimented with a cranberry almond tart too) but I felt extra joy that I had something delicious and homemade to come home to.
One should not boast about ones cooking but it really is an excellent tart.
